True fact: I love chocolate. I also love peanut butter.
True fact: This recipe really does taste like a peanut butter cup! It’s also incredibly rich so you can eat a super tiny portion and not feel cheated. This makes it a winner in my book for sure. Don’t mess with my dessert! ; )
Inside Out Peanut Butter Cup
Found the recipe here.
Crust:
1/2 stick (4 TBSP) butter, softened
1/3 cup creamy peanut butter
3/4 cup sugar
1/2 tsp salt
1 1/4 cup flour
Preheat oven to 350 degrees and grease springform pan.
Cream together butter, peanut butter, sugar, and salt. Add flour and mix until crumbly.
Press dough into pan. Press it up sides of pan about two inches.
Bake for 8-10 minutes or until lightly browned.
Filling:
3/4 cup chocolate chips
1 stick (8 TBSP) butter
1/2 tsp salt
3/4 cup sugar
1 cup flour
2 eggs, beaten
While crust is baking, melt the chocolate chips, butter, and salt over medium heat.
Remove from heat and add sugar flour. Stir until combined.
Add the beaten eggs and stir until you get a smooth consistency.
Pour into crust and bake an additional 20-22 minutes.
When done baking cool for ten minutes, then remove from pan to continue cooling. My crust was kind of sticking up awkwardly so i just crumbled the edges down on top.
Frosting:
1/2 cup chocolate chips
1/2 cup creamy peanut butter
Melt together in small saucepan. Mmmmm, can’t you almost taste the chocolatey-ness?
Stir until well combined and drizzle on top.
Pick up a fork and enjoy a little slice of peanut-buttery heaven.
