The challenge for July was fried chicken.
I’ve never made traditional fried chicken (that I can remember, anyway), but I do like to attempt chicken strips once in a while.
I had this recipe bookmarked on Pinterest and this challenge was the perfect opportunity to try it out.
Coconut Chicken Strips
4 boneless skinless chicken strips
2 eggs
1/4 cup coconut milk
1/2 cup flour
1 cup breadcrumbs
1 cup coconut
1/2 tsp salt
Oil for frying
Trim chicken of fat and cut in diagonal strips.
Combine flour and salt in bowl, coconut milk and egg in a second bowl, and breadcrumbs and coconut in a third bowl.
Heat your oil (I used a fryer) and dredge each strip through flour mixture, then egg mixture, and finally through the breadcrumbs.
Put in oil and let cook until golden brown (about 3-4 minutes in the fryer).
Serve with dipping sauce of your choice.
These were yummy and the coconut added a nice twist to boring chicken strips.

Your chicken strips sound wonderful. I like the idea that you used the coconut and coconut milk, it is something different.
I really like the use of coconut milk in this recipe. Looks good!
