This is a really quick and yummy recipe!
Why have I never tried a stir-fry before? I think it all has something to do with the words “stir” and “fry” being associated in my mind with that hamburger meat and carrot stuff mom used to make back in the motorhome (and beyond) days. Sorry, mom.

Chicken Stir Fry

2 chicken breasts
2 TBSP olive oil
Stir-fry sauce (I used Kikkomans bottled)
Sliced red, green, and/or yellow peppers

Cut chicken into bite size pieces. Add oil to pan and cook until chicken is done.

Add stir fry sauce and vegetables to pan and stir-fry for 2 minutes.

Add soy sauce and cook until it thickens. Serve over rice.
