I remember making rock candy as a kid for a science fair and thinking it was the most awesome experiment ever because – HELLO! – you got to eat sugar when it was all over with.

(I also remember feeling kinda lame next to the kid with the giant volcano…but in the end the sample plate generated so many visitors to our table that all feelings of lameness faded away. Especially when the volcano wouldn’t erupt.)

Here’s how we made ours.

Soak bamboo skewers (with tips cut off) in water for a few minutes, then roll in sugar.
Set aside to dry.

Combine 3 cups of water and 8-9 cups of sugar in a pot over medium/high heat.
Stir constantly until the mixture begins to simmer.

Let cool for a few minutes, then pour into jars and add some food coloring.
Clip a clothes pin at about the midway point of the skewer and submerge in jar, placing it so it does not touch the side or bottom of the jar.
The sugar that has dried on will start to crystallize and grow over several days.
It should be ready in 7-10 days.

(We had to start over after a few days so ours is not complete yet.)
