Okay…enough of the someday’s.
Here’s one of the things that I actually made.
And it was super simple.
And low sugar.
And good!
Can it get any better than that?
Single (or two or three) Ingredient Ice Cream
(Recipe found here)
4 ripe bananas
2 TBSP creamy peanut butter (optional)
2 tsp cocoa powder (optional)
Slice the bananas. Phew. That was hard.
Stick in the freezer for an hour or until frozen.
Place the bananas in blender or food processor and pulse until smooth.
The consistency will slowly turn from coarse to creamy. Even if you have the devils blender, like me.
Add the peanut butter and/or cocoa powder, blend some more, and serve.
Or, if you prefer scoops, return to the freezer for a little while.
Personally, I loved the addition of the peanut butter, but not so much the cocoa powder.
(Heresy, I know.)
It was just a little too bitter for my tastes, but Jeremy and the girls liked it.
The banana taste wasn’t overpowering and the consistency was perfect! Perfect for anyone who is looking for a dairy-free or sugar-free recipe. I think it’d be good with coconut milk and shredded coconut. Yummmm…..

Oh I love snickerdoodles!!!! You know it’s funny…. I just wrote a blog post about pinterest too! It hasn’t been working for me too well today though. I can’t make new boards or even view my current ones. I can add things but have to add them to existing boards so now I have things in boards that don’t make since. Can’t view them right now though LOL I think they are having technical difficulties. I think I managed to subscribe to your blog finally… hopefully I’ll start getting your posts. Miss yur guts.

I am making those snickerdoole cupcakes right now. I am on the list to bring a snack to something I’m going to tonight and I was going to make these pumpkin spice muffins. I have this muffin tin that looks like little pound cakes so they end up looking like little pumpkins with a little frosting. Well……. that didn’t turn out so well. I don’t know what I did wrong but they taste really bland and they stuck to the pan and broke into ugly pieces. So I switched to plan B. I bought some sour cream just incase. I also have these really cute cupcake liners that I’m going to use. I put the batter in the frige to cool cause I’m not looking forward to rolling a blob of batter around in cinnamon sugar. maybe I’ll just do the tops since they are going in a muffin liner. I’ll take a picture (after I clean up the mess I made!!!!)
